This makes really great thin crust pizza. The key is to pre-bake in a hot pizza oven for a few minutes, that gets the base crispy in full of air bubbles.
(These quantities make one 12″ pizza base)
1 teaspoon yeast
1 teaspoon salt
150 grams warm water
50 grams brown rice flour
50 grams corn starch
50 grams potato starch
12 grams millet flour
12 grams sweet rice flour
1 teaspoon xanthan gum
1 teaspoon ground psyllium husk
1 tablespoon olive oil
mix together water and yeast and set aside for a few minutes to activate
wisk together the dry ingredients
When the yeast and water are foamy, add the olive oil and mix. Then add to the dry ingredients and mix to a stiff dough.
Use the dough immediately (the longer you leave it the less dramatic the bubbling will be).
Roll out onto a piece of parchment. then pre-bake on the parchment for a few minutes.
Remove from parchment and place onto a peel dusted with Millet flour. Add toppings and bake until done.
