An old favorite…
Serves 2
4 tsp Olive Oil
1 small onion finely diced
2 tsp garam masala (or you can substitute 1 tsp ground cumin if preferred)
Good pinch of chili powder
8oz can chickpeas roughly mashed
4oz chopped spinach
2oz panko bread crumbs
1 Tbsp chopped fresh cilantro
Heat oil and saute onions for 5 mins until soft. Add garam masala (or cumin) and chili powder and fry for 1 min
Place mashed chickpeas, chopped spinach, breadcrumbs and cilantro in bowl. Add onions. Mix and shape into patties.
Grill or fry.
