2 tbs dry yeast
23g salt
1000ml water, lukewarm
6 tbs yogurt
130g rye flour
40g flax seeds
2 tbs sesame seeds
80g whole rye cooked
1 kg all purpose flour
1. disolve the dry yeast in a small amount of the water – leave 2 min
2. Stir and add rest of water, yogurt,salt, rye flour, flax and sesame seeds and whole rye
3. Add 1/2 the flour, stir and then add the rest of the flour. Use kitchen aid on medium speed for 5 mins
4. cover with kitchen towl and let rise 1 hr. Can also leave it much longer (over night).
5. put in greased loaf tin or make rolls
6. bake in pre-heated oven 465F 20 mins, then for loaf, reduce heat to 380f and bake another 35- 40 mins. Rolls are done at 20.
