Makes a great appetizer. Make in advance. Serve at room temp.
1 cup olive oil
3 large potatoes, peeled & thinly sliced
1 large onion, thinly sliced
4 large eggs
Kosher salt
Heat oil in skillet. add potatoes and onions one slice at a time in alternating layers. Salting as you go. Cook until tender. Drain. Beat eggs, add potato and onion to egg mixture and let sit for 15 min. then cook in the skillet, turning once.
