Simple Baked Ham
Fed a crowd at a Winter Solstice Party.
20lb raw ham served 30 adults and many, many children.
Rinse the ham in water several times then leave to soak overnight, completely submerged.
Tent with foil. Bake 25 minutes per Lb at 325F. Take the ham out of the oven and remove any dark brown skin, preserving the fat layer. Smother with a good mustard. Take handfuls of brown sugar and press onto the mustard slathered ham. Stud with cloves (at least 20). Take the oven up to 425F and put the ham back in for 20 – 30 mins until the sugar & mustard are brown and caramelized. Let rest at least 45 mins before serving.
Note: the cooking juices from the ham make a great stock for soups and sauces. Just chill and de-fat.
